CHILLED TRADITIONAL CHRISTMAS ROAST TURKEY

This traditional classic is accompanied with homemade stuffing, brown gravy sauce & Cranberry Jelly.
Take the chilled turkey out from the refrigerator and let it sit until it reaches room temperature before reheating.
Preheat oven to 180° Celsius for 10 minutes.
Place turkey breast side up, on flat rack in shallow roasting pan of 2.5 inches deep. Brush skin with cooking oil or spray with cooking spray to prevent the skin from drying. The turkey may be heated with or without the foil wrapping. To insure it will not dry out, place the turkey on a rack and add water to the cavity and bottom of the pan.
Place your turkey in the pre-heated oven, lower down the temperature to 165° Celsius and heat for approximately 60 minutes, depending on the size of the turkey.
*Turkey 4.5kg - 60 mins approximate.
If you have a food thermometer, the turkey should ideally be reheated to 73° Celsius.
Let stand 10 minutes before carve and serve immediately.
Preheat oven to 180°Celsius. Place covered pan of stuffing in the oven for around 15 mins. Remove the foil covering to brown the top for the last 10 min. if desired. (May be heated in microwave also.)
Place in saucepan which will allow stirring. Heat over LOW heat to avoid scorching. Stir often. Heat until gravy reaches 80° Celsius on a thermometer or slightly simmering. *In microwave: on medium power, 1 to 4 minutes, partially covered.
